I have done several light duty tours making use of hotels and restaurants. I met a gentleman in Columbia, SC that was planning a fully loaded tour to Michigan. He had some really cool equipment including water bottle cages on the fork, that sat extremely low....minimizing the effect on steering. He also had a unique handlebar, which I was unfamiliar.

He had two different panniers in the back, one seemed to be made for King Kong, it was the biggest bicycle bag I have ever seen. This guy is serious about unsupported touring. Watch this bike on its way to Michigan from SC in the summer.
